Colombia Tolima Gaitania Producer Blend Washed
Tasting notes: Fragrance and aroma of brown sugar and vanilla, flavors of milk chocolate, honey and dark chocolate with an aftertaste of cocoa powder, pomegranate and lime. Mild citric acid with a medium-heavy body and chewy mouthfeel.
The town of Gaitania is within the Planadas municipality in the Tolima Department of Colombia.
Produced by the Nasa Wesx indigenous group of Gaitania, the Nasa Wesx community prioritizes quality and conservation of the environment and has achieved organic certification on all of their coffees.
This coffee is harvested following strict ripeness criteria and then floated and hand-sorted to remove defects. After floating, cherries are depulped and fermented in water for 12 hours before being gently washed. The fully washed coffee is dried on raised beds for about 15 days until the target moisture content has been reached.
